Christmas baking ideas: German recipes to get you into the festive spirit

Christmas is just around the corner and, of course, there’s a lot of baking going on. I would like to take this opportunity to give you four of my favourite recipes.

  1. Haselnussmakronen (Hazelnut macaroons)

Ingredients:

  • 3 egg whites
  • 200 g icing sugar
  • 250-300 g ground hazelnuts (more hazelnuts for larger eggs, fewer for smaller eggs)
  • 1 pinch of cinnamon
  • 2 drops of bitter almond oil
  • approx. 60 baking wafers
  • approx. 60 whole hazelnuts for decoration

Preparation:

  1. Beat the egg whites until they form stiff peaks.
  2. Combine and mix together with all of the other ingredients.
  3. Apply about a teaspoon of mixture to the baking wafers. 
  4. Place the hazelnuts on the top of the mixture.

Baking time:

20 min at 140°C in a fan oven.

  1. Butter S cookies

Ingredients:

  • 375 g flour
  • 250 g butter
  • 180 g granulated sugar
  • 5 egg yolks

Preparation:

  1. Mix the butter, sugar and eggs.
  2. Add flour and mix well. 
  3. Divide them up into fingers and shape them into an ‘S’. 
  4. Press the top in the granulated sugar before baking.

Baking time:

10-15 min at 160°C

  1. Nougatblüten (Nougat flowers)

Ingredients:

For the dough:

  • 200 g granulated sugar
  • 300 g ground almonds
  • 2 eggs

For the filling:

  • Nutella

To finish off with:

  • 1 pinch of cinnamon
  • 1 pinch of nutmeg
  • 1 pinch of allspice
  • 1 tablespoon of icing sugar

Preparation:

  1. Mix all of the ingredients for the dough.
  2. Chill in the fridge for 1 hour.
  3. Sprinkle baking paper with sugar, roll out the dough and cut into shapes.
  4. After baking, once cooled, sandwich with Nutella. 
  5. Sprinkle with the cocoa powder, cinnamon and icing sugar mixture.

Baking time:

8 min at 180°C

  1. Nussplätzchen (Nut cookies)

Ingredients: 

  • 250 g flour
  • 1 teaspoon of baking powder
  • 150 g granulated sugar
  • 100 g butter
  • 2 eggs
  • 200 g ground hazelnuts
  • 1 packet of vanilla sugar
  • 3 drops of bitter almond oil
  • condensed or normal milk

Preparation:

  1. Mix all of the ingredients.
  2. Chill the dough in the fridge for 30 minutes.
  3. Cut into different shapes and brush with condensed or normal milk before baking.

Baking time:

10-15 min at 200°C
