Christmas is just around the corner and, of course, there’s a lot of baking going on. I would like to take this opportunity to give you four of my favourite recipes.

- Haselnussmakronen (Hazelnut macaroons)
Ingredients:
- 3 egg whites
- 200 g icing sugar
- 250-300 g ground hazelnuts (more hazelnuts for larger eggs, fewer for smaller eggs)
- 1 pinch of cinnamon
- 2 drops of bitter almond oil
- approx. 60 baking wafers
- approx. 60 whole hazelnuts for decoration

Preparation:
- Beat the egg whites until they form stiff peaks.
- Combine and mix together with all of the other ingredients.
- Apply about a teaspoon of mixture to the baking wafers.
- Place the hazelnuts on the top of the mixture.
Baking time:
20 min at 140°C in a fan oven.

- Butter S cookies
Ingredients:
- 375 g flour
- 250 g butter
- 180 g granulated sugar
- 5 egg yolks

Preparation:
- Mix the butter, sugar and eggs.
- Add flour and mix well.
- Divide them up into fingers and shape them into an ‘S’.
- Press the top in the granulated sugar before baking.
Baking time:
10-15 min at 160°C

- Nougatblüten (Nougat flowers)
Ingredients:
For the dough:
- 200 g granulated sugar
- 300 g ground almonds
- 2 eggs
For the filling:
- Nutella
To finish off with:
- 1 pinch of cinnamon
- 1 pinch of nutmeg
- 1 pinch of allspice
- 1 tablespoon of icing sugar

Preparation:
- Mix all of the ingredients for the dough.
- Chill in the fridge for 1 hour.
- Sprinkle baking paper with sugar, roll out the dough and cut into shapes.
- After baking, once cooled, sandwich with Nutella.
- Sprinkle with the cocoa powder, cinnamon and icing sugar mixture.
Baking time:
8 min at 180°C

- Nussplätzchen (Nut cookies)
Ingredients:
- 250 g flour
- 1 teaspoon of baking powder
- 150 g granulated sugar
- 100 g butter
- 2 eggs
- 200 g ground hazelnuts
- 1 packet of vanilla sugar
- 3 drops of bitter almond oil
- condensed or normal milk

Preparation:
- Mix all of the ingredients.
- Chill the dough in the fridge for 30 minutes.
- Cut into different shapes and brush with condensed or normal milk before baking.
Baking time:
10-15 min at 200°C
